I have read how Dr. Cousins at Tree of Life clinic recommend doing an hour or two at the higher temp to keep mold issues at bay.  The higher temp is not what the food experiences as this is the time when the food has a lot of moisture and also experiencing a lot of evaporation.  When water evaporates (from your skin or from this food) it cools the surface that it is evaporating from. For this reason, the food is not experiencing the higher temp.  Hope that makes sense!</description>
